Slimming World fans cannot get enough of baked oats. Perfect for breakfast, dessert or whenever you fancy something sweet, they are super easy to make and incredibly quick to cook.

Last week Instagram foodie Cakeontherun shared her recipe for Victoria sponge style baked oats which went down a storm with readers. This week she has given a step-by-step guide to apricot baked oats.

The British apricot season is current in full swing (from May to September), so there's no better time to give this healthy dish a go. Made predominately with oats, as the name suggests, the recipe also calls for yoghurt, sweetener, baking powder, lemon juice and of course an apricot.

The recipe below serves one and can be enjoyed straight away as it takes a mere 90 seconds to cook in a microwave. For those following the Slimming World diet plan, 40g of plain porridge oats can be counted as a Healthy Extra ‘b’ choice.
